This is Christmas party food for people who know exactly what they're doing. Roast beef. Horseradish. Golden puff pastry. A little cheese. A lot of.

You’ll Need

1 sheet ready-rolled puff pastry
250g cooked roast beef, finely chopped
2 tbsp horseradish sauce
75g mature cheddar, grated
1 egg, beaten
1 tsp black pepper
1 tsp dried thyme

Optional But Dangerous
Extra horseradish
Blue cheese crumbles

Beef gravy for dipping

Method

Preheat your air fryer to 180°C.

Place the chopped roast beef into a bowl.

Add the horseradish sauce, cheddar, black pepper, and thyme.

Mix thoroughly until evenly combined.

Unroll the puff pastry onto a board.

Cut lengthways into two long strips.

Run the roast beef mixture down the centre of each strip.

Brush one pastry edge lightly with beaten egg.

Fold the pastry over the filling and seal firmly.

Cut into bite-sized festive rolls.

Brush the tops with the remaining beaten egg.

Place into the air fryer basket with space between each roll.

Air fry at 180°C for 10–12 minutes until puffed, deeply golden, and beautifully crisp.

Allow to cool for 2 minutes before serving.

Serve warm while the pastry is still flaky and the filling is hot.

Lad Tip: Horseradish should be noticeable, not violent. You want people saying "ooh that's nice" rather than immediately reaching for a fire extinguisher. If you've got leftover roast beef from Christmas Day, this recipe is basically what it was waiting its whole life to become.
