Air Fryer Serbian Karadjordjeva Stuffed Pork Rolls

Karadjordjeva snicla is a Serbian breaded roll built around a thin cutlet and a rich kajmak centre. It is the sort of restaurant classic that arrives long, golden and entirely unapologetic. Pork escalopes make a practical air-fryer version, with thick cream cheese standing in for kajmak. A double-sealed crumb keeps the filling inside until the first knife cut.

You’ll Need

For the Pork Rolls
4 large pork loin escalopes, about 700g total
150g full-fat cream cheese
50g feta, finely crumbled
1 tbsp chopped parsley
½ tsp garlic powder
½ tsp sea salt
½ tsp black pepper
For the Coating
60g plain flour
2 eggs, beaten
120g panko breadcrumbs
1 tbsp vegetable oil
To Serve
Lemon wedges
Tartar sauce
Optional but dangerous
Skin-on fries
Ajvar pepper relish
A cold Serbian lager

Method

Bash the pork between baking paper until very thin and roughly rectangular.

Mix the cream cheese, feta, parsley and garlic powder.

Shape the filling into four short logs and place one near the edge of each escalope.

Fold in the sides, roll tightly and chill seam-side down for 20 minutes.

Season, then coat each roll in flour, beaten egg and panko mixed with the oil.

Preheat your air fryer to 190°C.

Air fry seam-side down for 14-17 minutes, turning carefully after 9 minutes.

Check the centre of the pork has reached 75°C.

Rest for 4 minutes and serve whole with lemon and tartar sauce.

Lad Tip: Keep the cheese log away from every edge and chill the finished roll. Warm, overfilled cheese finds seams with the determination of water through a caravan roof.
