Air-Fryer Smokehouse Lamb Chop Boxes

This is barbecue food for people who believe lamb deserves far more attention than it usually gets. Juicy lamb chops. Smoky seasoning.

You’ll Need

8 lamb chops
500g baby potatoes, halved
1 tbsp olive oil

Smokehouse Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Garlic Herb Butter
40g butter, melted
2 cloves garlic, finely grated
1 tsp fresh rosemary, finely chopped
1 tsp fresh thyme, finely chopped

Optional But Dangerous
Mint yoghurt dip
Corn ribs
Flatbreads
Cold beer

Method

Preheat your air fryer to 200°C.

Toss the potatoes with half the olive oil and half the seasoning.

Place the potatoes into the air fryer basket and cook for 8 minutes.

Rub the lamb chops with the remaining olive oil.

Coat thoroughly with the remaining seasoning.

Add the lamb chops to the basket alongside the potatoes.

Air fry for 8–10 minutes, turning halfway through, until the lamb is beautifully browned and cooked to your preferred doneness.

While everything cooks, combine the melted butter, garlic, rosemary, and thyme.

Immediately after cooking, brush the lamb chops generously with the garlic herb butter.

Toss the potatoes through any remaining butter mixture.

Allow the lamb to rest for 2–3 minutes.

Serve everything together in loaded barbecue boxes.

Lad Tip: Lamb chops don't need much help. A hot fryer, good seasoning, and enough confidence to leave them alone is usually all it takes. If you keep poking them every two minutes, you're not helping — you're just annoying the lamb.
