Air-Fryer Smokehouse Lamb Kofta Skewers

This is barbecue food that smells incredible before it even reaches the table. Lamb. Garlic. Mint. Cumin. Charred edges. The sort of food that immediately.

You’ll Need

600g lamb mince
1 small red onion, finely grated
3 cloves garlic, crushed
1 tbsp fresh mint, finely chopped
1 tbsp fresh parsley, finely chopped

Kofta Seasoning
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes
1 tbsp olive oil

Optional But Dangerous
Flatbreads
Garlic yoghurt sauce
Pickled red onions
Chilli sauce

Method

Preheat your air fryer to 200°C.

Add the lamb mince, grated onion, garlic, mint, parsley, cumin, coriander, smoked paprika, salt, black pepper, chilli flakes, and olive oil to a large bowl.

Mix thoroughly until fully combined.

Divide into 8 equal portions.

Shape around metal or soaked wooden skewers into long sausage-shaped koftas.

Place the skewers into the air fryer basket in a single layer.

Air fry for 10–12 minutes, turning halfway through.

Cook until browned on the outside with lightly charred edges while remaining juicy inside.

For extra smokehouse colour, give them a final 2-minute blast at 205°C.

Allow to rest for 2 minutes before serving.

Serve with flatbreads, garlic yoghurt, pickled onions, or chilli sauce.

Lad Tip: Don't overwork the lamb mixture. Mix it until combined and stop. Overworked koftas turn dense and heavy. Good koftas should stay juicy enough that you immediately start planning when you're making them again.
