Air Fryer Smoky Beer Cheese Brat Skillet

AF-200 Crew BBQ Recipe

Air Fryer Smoky Beer Cheese Brat Skillet

This is proper BBQ comfort with a nod to the smokehouse and the beer garden. Smoky bratwurst-style sausages, crispy potatoes, caramelised onions, and a rich beer cheese sauce all cooked together into one bubbling tray. Salty, smoky, cheesy, and built for sharing with a cold pint while the barbecue's still roaring.

You’ll Need

4 smoked bratwurst or pork sausages, sliced
500g baby potatoes, halved
1 large onion, sliced
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp sea salt
½ tsp cracked black pepper

For The Beer Cheese Sauce
25g butter
25g plain flour
200ml lager or pale ale
150ml whole milk
1 tsp Dijon mustard
150g mature cheddar, grated
50g mozzarella, grated
½ tsp smoked paprika

To Finish
2 spring onions, finely sliced

Optional But Dangerous
Crispy bacon bits
Pickled jalapeños
Pretzel pieces
Extra BBQ sauce

Method

Preheat your air fryer to 200°C.

Toss the potatoes with the olive oil, smoked paprika, garlic powder, sea salt, and black pepper.

Cook for 12 minutes, shaking halfway through.

Add the sliced sausages and onions.

Cook for another 10–12 minutes until the sausages are browned, the onions are caramelised, and the potatoes

are crisp.

Meanwhile, melt the butter in a saucepan.

Whisk in the flour and cook for 1 minute.

Gradually whisk in the beer, then the milk, until smooth.

Stir in the Dijon mustard, smoked paprika, cheddar, and mozzarella until the sauce is thick, rich, and silky.

Transfer the potatoes, sausages, and onions into a foil tray or heatproof dish.

Pour over the beer cheese sauce.

Return to the air fryer at 180°C for 3–4 minutes until bubbling around the edges and lightly browned on top.

Finish with spring onions, crispy bacon bits, jalapeños, pretzel pieces, or a drizzle of BBQ sauce if using.

Serve immediately while the cheese is molten and the sausages are still sizzling.

Lad Tip: Use a proper lager or pale ale rather than a dark stout. It gives the cheese sauce a gentle malty richness without overpowering the smoky sausages, creating the sort of tray everyone gathers around before they've even grabbed a plate.
