Air Fryer Smoky Cheddar Jalapeño Biscuit Bites

These are proper Southern-style biscuit bites with smokehouse attitude. Fluffy, buttery biscuits packed with mature cheddar, roasted jalapeños, crispy bacon and smoky seasoning, then brushed with garlic butter straight out of the air fryer. They're perfect alongside brisket, ribs or a bowl of pit beans—and they're almost guaranteed to disappear before the meat even lands on the table.

You’ll Need

For the Biscuit Bites
250g self-raising flour
1 tsp baking powder
½ tsp sea salt
½ tsp garlic powder
1 tsp smoked paprika
75g cold butter, diced
120ml buttermilk
120g mature cheddar, grated
2 roasted jalapeños, finely diced
5 rashers smoked streaky bacon, cooked until crisp and finely chopped
2 spring onions, finely sliced

Garlic Butter Glaze
30g butter, melted
1 clove garlic, finely grated
1 tsp chopped fresh parsley

Optional but dangerous
Hot honey drizzle
Ranch dressing
BBQ sauce
Crispy onions
Extra grated cheddar

Method

Preheat your air fryer to 180°C.

In a large bowl, combine the flour, baking powder, sea salt, garlic powder and smoked paprika.

Rub the cold butter into the flour until the mixture resembles coarse breadcrumbs.

Stir through the grated cheddar, diced jalapeños, crispy bacon and spring onions.

Pour in the buttermilk and gently mix until a soft dough forms. Don't overwork it.

Divide the dough into 10–12 equal portions and gently roll into balls.

Place the biscuit bites into the air fryer basket, leaving a little space between each one.

Air fry for 10–12 minutes, until risen, golden and cooked through.

Mix together the melted butter, garlic and parsley.

Brush the hot biscuit bites generously with the garlic butter as soon as they come out of the fryer.

Serve warm with BBQ meats, chilli, pit beans or simply alongside plenty of smoky butter.

Lad Tip: Don't overmix the dough. A light touch keeps the biscuits fluffy inside while the cheddar melts into little pockets of smoky goodness. The garlic butter brushed on while they're still hot is what takes these from "good" to "where's the rest gone?"
