Air-Fryer Smoky Chicken & Pepper Quesadilla Wedges

Some dinners are built for sharing. Whether they actually get shared is another matter. These golden tortilla wedges are packed with smoky chicken, roasted peppers, melted cheese and a lightly spiced tomato filling before being crisped until beautifully golden. Crunchy on the outside, ridiculously cheesy in the middle and perfect for dipping into cool sour cream or fresh salsa. Fast. Crispy. Proper comfort food.

You’ll Need

For the Chicken
600g chicken breast or thigh fillets, diced
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic granules, 1 tsp onion granules
1 tsp ground cumin, 1 tsp sea salt
½ tsp black pepper

For the Quesadillas
4 large flour tortillas, 1 red pepper, diced
1 yellow pepper, diced
1 small red onion, finely sliced
2 tbsp tomato salsa
200g grated mature cheddar
100g grated mozzarella

To Serve

Sour cream

Fresh salsa

Chopped coriander

Optional but Dangerous

Pickled jalapeños

Crushed tortilla chips

Guacamole

Chipotle mayo

Lime wedges

Method

Preheat your air fryer to 200°C.

Toss the chicken with the olive oil, smoked paprika, garlic granules, onion granules, cumin, salt and black pepper.

Add the chicken, peppers and onion to the air fryer basket.

Air fry for 10–12 minutes, shaking halfway through, until the chicken is cooked through and the vegetables are lightly roasted.

Stir the tomato salsa through the hot chicken mixture.

Lay two tortillas flat and divide the chicken mixture evenly between them.

Sprinkle generously with the cheddar and mozzarella.

Top with the remaining tortillas and press down gently.

Carefully place each quesadilla into the air fryer and cook at 190°C for 4–5 minutes per side until golden, crisp and the cheese has completely melted.

Slice each quesadilla into wedges.

Serve immediately with sour cream, salsa and chopped coriander.

Lad Tip: Leave the cooked quesadillas to stand for one minute before slicing. The melted cheese settles just enough to hold everything together, so you get clean wedges instead of the filling sliding straight onto the plate.
