Air-Fryer Sticky BBQ Pork Riblet Trays preparation stage

You’ll Need

800g pork riblets or pork rib strips
1 tbsp olive oil

Smokehouse Rub
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Sticky BBQ Glaze
4 tbsp smoky BBQ sauce
1 tbsp honey
1 tbsp brown sugar
1 tsp Worcestershire sauce
1 tsp apple cider vinegar

Optional But Dangerous
Corn on the cob
Pickles
Potato wedges
Cold beer

Method

Preheat your air fryer to 190°C.

Pat the riblets dry thoroughly with kitchen paper.

Toss with the olive oil.

Mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, and chilli flakes.

Coat the riblets thoroughly until every piece is fully seasoned.

Place into the air fryer basket in a single layer.

Air fry for 20–24 minutes, turning halfway through.

While the pork cooks, combine the BBQ sauce, honey, brown sugar, Worcestershire sauce, and apple cider vinegar.

Once the riblets are browned and cooked through, toss them thoroughly in the glaze.

Return to the air fryer for 4–5 minutes until the glaze becomes thick, sticky, and heavily caramelised.

Remove and allow to rest for 2 minutes.

Pile onto a tray and serve immediately.

Lad Tip: Good riblets should leave evidence. Sticky fingers, sauce on your face, and a suspiciously empty tray ten minutes later. If everybody still looks tidy after eating them, something has gone very wrong.
