You’ll Need

120g pitted dates, finely chopped
70g light brown sugar
100ml boiling water
1 egg
1/2 tsp bicarbonate of soda
100g self-raising flour
70g softened butter
6 tsp thick toffee sauce, frozen in blobs
To Finish
Warm toffee sauce
Pinch of sea salt
Optional But Dangerous
Hot custard
Vanilla ice cream

Method

Freeze six teaspoon-sized blobs of toffee sauce for at least 30 minutes.

Pour the boiling water over the dates, stir in the bicarbonate of soda and leave for 10 minutes.

Preheat the air fryer to 160°C and grease six silicone muffin cups.

Beat the butter and sugar, then beat in the egg.

Fold in the flour and the dates with their soaking liquid.

Half-fill the cups, add a frozen toffee centre and cover with the remaining batter.

Air fry at 160°C for 10-12 minutes until risen and just firm.

Rest for 3 minutes, turn out and cover with warm toffee sauce.

Lad Tip: Frozen sauce gives you a molten middle without leaving raw sponge around it. That is not cheating; that is engineering.
