You’ll Need

100g butter
1 tsp ground ginger
80g golden syrup
1/2 tsp mixed spice
50g black treacle
1/2 tsp bicarbonate of soda
80g light brown sugar
1 egg
100g plain flour
60ml whole milk
80g medium oatmeal
To Finish
1 tbsp warmed golden syrup
Crystallised ginger, finely chopped
Optional But Dangerous
Hot custard
Vanilla ice cream

Method

Preheat the air fryer to 150°C and line a 15cm square tin.

Warm the butter, golden syrup, treacle and brown sugar gently until smooth, then cool for 5 minutes.

Mix the flour, oatmeal, ginger, mixed spice and bicarbonate of soda in a bowl.

Beat the egg with the milk.

Pour the syrup mixture and egg mixture into the dry ingredients and stir until smooth.

Transfer to the tin and cover loosely with foil.

Air fry at 150°C for 15 minutes, remove the foil, then cook for another 4-5 minutes until just set.

Brush with warm golden syrup, cool completely and cut into squares.

Lad Tip: Parkin is meant to be sticky, not dry enough to grout a wall. Pull it when the centre is just set and let tomorrow do the rest.
