You’ll Need

8 tbsp thick-cut orange marmalade
100g self-raising flour
100g softened butter
Finely grated zest of 1 orange
90g light brown sugar
2 tbsp orange juice
2 eggs
1/2 tsp ground ginger
To Finish
Extra warm marmalade
Candied orange peel
Optional But Dangerous
Hot custard
Dark chocolate sauce

Method

Preheat the air fryer to 160°C and grease four ramekins.

Spoon one tablespoon of marmalade into each pot.

Beat the butter and brown sugar until creamy, then beat in the eggs.

Fold in the flour, orange zest, juice and ginger.

Divide the batter between the ramekins.

Cover loosely with foil and air fry for 11 minutes.

Remove the foil and cook for another 4-5 minutes until risen and just set.

Rest for 3 minutes and brush with the remaining warm marmalade.

Lad Tip: Thick-cut marmalade gives proper bitter-orange punch. Smooth breakfast jelly makes a sweet cake but misses the point.
