Air-Fryer Stilton Stuffed Mushrooms

Christmas is the one time of year when somebody can put blue cheese into a mushroom and call it festive. And honestly? They're absolutely right. Earthy.

Air-Fryer Stilton Stuffed Mushrooms preparation stage

You’ll Need

12 large chestnut mushrooms
150g Stilton, crumbled
50g cream cheese
2 cloves garlic, finely grated
1 tsp dried thyme
30g breadcrumbs
1 tbsp butter, melted
1 tsp black pepper

Optional But Dangerous
Chopped bacon
Walnuts
Extra Stilton

Method

Preheat your air fryer to 190°C.

Remove the mushroom stalks and finely chop them.

Place the chopped stalks into a bowl.

Add the Stilton, cream cheese, garlic, thyme, and black pepper.

Mix thoroughly until fully combined.

Fill each mushroom generously with the cheese mixture.

In a separate bowl, mix the breadcrumbs with the melted butter.

Sprinkle the breadcrumb mixture over the mushrooms.

Place the mushrooms into the air fryer basket in a single layer.

Air fry at 190°C for 8–10 minutes until the mushrooms soften and the topping turns golden.

For extra festive colour, give them a final 1–2 minutes at 200°C.

Remove carefully and allow to cool for 1 minute before serving.

Serve warm while the Stilton is still gloriously molten.

Lad Tip: Blue cheese always looks like it might be a terrible idea right up until the first bite. Then suddenly you're standing by the buffet wondering whether it's socially acceptable to take four more. Christmas says yes.
