Air-Fryer Surinamese Pom Chicken Root Vegetable Pots

Make Air-Fryer Surinamese Pom Chicken Root Vegetable Pots with measured UK ingredients, practical air-fryer timings and bold Grand Tour flavour.

Pom is a Surinamese celebration bake of chicken and grated pomtajer root, sharpened with citrus and enriched by a tomato-based sauce. The top goes dark and crisp while the centre stays soft and savoury.

Individual pots give the air fryer more edges to brown and make the long bake manageable. Orange, lime and allspice keep the rich root mixture lively around the pieces of seasoned chicken.

You’ll Need

For the Chicken
600g boneless chicken thigh fillets, cut into pieces
1 tbsp rapeseed oil
1 tsp ground allspice
½ tsp sea salt
½ tsp black pepper

For the Pom
600g frozen grated pomtajer, thawed
1 small onion, finely diced
2 garlic cloves, finely grated
200g chopped tomatoes
100ml chicken stock
Juice of 1 orange
Juice of 1 lime
1 tbsp brown sugar
20g butter, melted

Optional but Dangerous
Steamed rice
Pickled cucumber
Hot pepper sauce

Method

Preheat your air fryer to 195°C.

Toss the chicken with the oil, allspice, salt and black pepper.

Air fry for 9 minutes, shaking halfway, until browned.

Mix the pomtajer with the onion, garlic, tomatoes, stock, orange juice, lime juice and sugar.

Fold in the chicken and divide between four buttered heatproof pots.

Cover tightly with foil and air fry at 175°C for 22 minutes.

Remove the foil and brush the tops with melted butter.

Air fry at 195°C for 10-13 minutes until dark gold and crisp at the edges.

Check the chicken reaches 75°C and the root mixture is piping hot throughout.

Rest for 5 minutes before serving.

Lad Tip: Use prepared frozen pomtajer from a Caribbean shop and cook it thoroughly. Raw taro-family roots are not tasting ingredients, the full covered bake is part of the recipe, not dead time.
