Air-Fryer Sweet Smoke Chicken Drumstick Buckets

This is the sort of barbecue food that gets carried to the table in a bucket and disappears before you've sat down. Sticky drumsticks.

You’ll Need

10 chicken drumsticks
1 tbsp olive oil

Smokehouse Rub
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Sweet Smoke Glaze
3 tbsp BBQ sauce
2 tbsp honey
1 tbsp brown sugar
1 tsp Worcestershire sauce
1 tsp apple cider vinegar

Optional But Dangerous
Coleslaw
Corn on the cob
Potato wedges
Ranch dip

Method

Preheat your air fryer to 190°C.

Pat the drumsticks dry with kitchen paper.

Add them to a large bowl with the olive oil.

Mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, and chilli flakes.

Coat the drumsticks thoroughly in the seasoning.

Place into the air fryer basket in a single layer.

Air fry for 22–25 minutes, turning halfway through.

While the chicken cooks, combine the BBQ sauce, honey, brown sugar, Worcestershire sauce, and apple cider vinegar.

During the final 5 minutes of cooking, brush the drumsticks generously with the glaze.

Return to the fryer until the glaze becomes sticky, dark, and caramelised around the edges.

Remove and allow to rest for 2 minutes.

Pile into a large serving bucket or tray and serve immediately.

Lad Tip: Drumsticks are one of the best barbecue cuts going. They're cheap, forgiving, and somehow always taste better when eaten standing up in the garden pretending you're only having one more. The lie starts around drumstick number four.
