Air-Fryer Texas Cowboy Beef Rib Trays

This is not delicate food. This is the sort of barbecue that assumes you've spent all day outside, lifted something heavy, fixed something

Air-Fryer Texas Cowboy Beef Rib Trays preparation stage

You’ll Need

800g beef short ribs or meaty beef ribs
1 tbsp olive oil

Texas Rub
1 tbsp coarse black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp chilli flakes

Cowboy Glaze
3 tbsp BBQ sauce
1 tbsp bourbon
1 tbsp honey
1 tsp Worcestershire sauce

Optional But Dangerous
Corn on the cob
Pickles
Loaded wedges
Cold beer

Method

Preheat your air fryer to 180°C.

Pat the beef ribs dry with kitchen paper.

Rub lightly with olive oil.

Mix together all the Texas rub ingredients.

Coat the ribs thoroughly on all sides.

Place into the air fryer basket or tray in a single layer.

Cook for 35–40 minutes, turning halfway through.

While the ribs cook, combine the BBQ sauce, bourbon, honey, and Worcestershire sauce.

During the final 8 minutes of cooking, brush the ribs generously with the glaze.

Return to the fryer and allow the glaze to darken and caramelise.

Cook until the ribs are tender, sticky, and heavily coloured around the edges.

Rest for 5 minutes before serving.

Pile onto a tray and serve immediately.

Lad Tip: Texas barbecue is built on pepper, patience, and confidence. If you keep opening the fryer every two minutes to check on them, all you're really doing is annoying the beef. Let it get on with its job.
