2 tsp coarse black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp chilli powder
½ tsp ground cumin
For The Texas Glaze
3 tbsp smoky BBQ sauce
1 tsp Worcestershire sauce
1 tsp apple cider vinegar
1 tsp honey

Method
Preheat your air fryer to 180°C.
Pat the beef rib pieces dry with kitchen paper.
Rub with the olive oil.
Mix together the coarse black pepper, smoked paprika, garlic powder, onion powder, sea salt, chilli powder, and
cumin.
Coat every piece of beef generously with the seasoning.
Arrange the beef in a single layer inside the air fryer basket.
Cook for 24–28 minutes, turning every 8 minutes, until the beef is tender with dark caramelised edges.
Meanwhile, whisk together the BBQ sauce, Worcestershire sauce, apple cider vinegar, and honey.
Brush the beef generously with the glaze.
Return to the air fryer for a final 4–5 minutes until the glaze becomes sticky and the edges develop a rich Texas-
style bark.
Rest for 3 minutes before serving.
Serve piled high with pickles, cornbread, skin-on fries, and pickled jalapeños if using.
