Air-Fryer Toffee Apple Crumble Cookies preparation stage

You’ll Need

1 small eating apple, peeled and finely diced
160g plain flour
1 tsp lemon juice
1/2 tsp bicarbonate of soda
90g softened butter
1 tsp ground cinnamon
90g light brown sugar
60g toffee pieces
1 egg
25g rolled oats
To Finish
Caramel sauce
Pinch of flaky sea salt
Optional But Dangerous
Vanilla ice cream
Extra toffee pieces

Method

Toss the diced apple with lemon juice and pat it very dry.

Preheat the air fryer to 160°C.

Beat the butter and sugar together, then beat in the egg.

Fold in the flour, bicarbonate of soda and cinnamon.

Stir through the apple, toffee pieces and half the oats.

Shape eight thick cookies and press the remaining oats onto the tops.

Air fry in batches for 9-11 minutes until the edges are set and the centres remain soft.

Rest for 5 minutes and drizzle with caramel.

Lad Tip: Dry the apple properly. Extra juice turns cookie dough into porridge, and not the useful breakfast kind.
