You’ll Need

1 sheet ready-rolled shortcrust pastry
1 tbsp lemon juice
150g golden syrup
1 tbsp double cream
70g fresh white breadcrumbs
1 egg, beaten
Finely grated zest of 1 lemon
To Finish
Icing sugar
Extra warm golden syrup
Optional But Dangerous
Clotted cream
Vanilla ice cream

Method

Preheat the air fryer to 175°C.

Cut eight pastry circles and press them into silicone muffin cups.

Prick the bases and air fry for 4 minutes.

Warm the golden syrup until runny, then stir in the breadcrumbs, lemon zest, juice and cream.

Spoon the filling into the pastry cases without overfilling.

Brush the exposed pastry with beaten egg.

Air fry for another 6-8 minutes until the pastry is golden and the filling is set at the edge.

Rest for 5 minutes and dust with icing sugar.

Lad Tip: Treacle tart filling expands and bubbles. Stop below the rim unless you want each case welded permanently to its cup.
