You’ll Need

1 sheet ready-rolled puff pastry
300g turkey mince
150g stuffing mix
100ml hot water
1 small onion, finely diced
1 tsp dried sage
1 tsp dried thyme
1 egg, beaten
2 tbsp cranberry sauce
½ tsp black pepper

Optional But Dangerous

Extra cranberry sauce
Brie cubes

Turkey gravy for dipping

Method

Preheat your air fryer to 180°C.

Place the stuffing mix into a bowl.

Pour over the hot water and leave for 2 minutes.

Add the turkey mince, onion, sage, thyme, black pepper, and half the beaten egg.

Mix thoroughly until fully combined.

Unroll the puff pastry onto a board.

Cut the pastry lengthways into two long strips.

Run the turkey and stuffing mixture down the centre of each strip.

Dot small amounts of cranberry sauce along the filling.

Brush one edge of the pastry lightly with beaten egg.

Fold the pastry over the filling and seal firmly.

Cut into bite-sized festive sausage rolls.

Brush the tops with the remaining egg.

Place into the air fryer basket with space between each roll.

Air fry at 180°C for 10–12 minutes until puffed, golden, and beautifully crisp.

Allow to cool for 2 minutes before serving.

Serve warm or cold.

Lad Tip: A small amount of cranberry works brilliantly. Too much and it leaks everywhere. If you're feeling particularly festive, hide a tiny cube of Brie inside each roll and watch people suddenly start asking who made them.
