Preheat your air fryer to 190°C.
Mix the softened butter with the grated garlic and dried thyme.
Butter one side of every slice of bread generously.
Place four slices butter-side down on a board.
Layer over the turkey evenly.
Add the cooked bacon.
Spoon small dollops of cranberry sauce across the turkey.
Arrange the Brie slices over the filling, then sprinkle over the grated Cheddar.
Finish with a little cracked black pepper.
Top with the remaining slices of bread, butter-side facing upwards.
Carefully place the sandwiches into the air fryer basket.
Air fry for 4–5 minutes, then carefully flip and cook for another 3–4 minutes, until both sides are beautifully golden and crisp and the cheese is completely melted.
Slice each sandwich in half and serve immediately with hot turkey gravy for dipping.
