You’ll Need
1kg turkey crown or turkey breast joint
2 tbsp softened butter
2 cloves garlic, finely grated
1 tsp dried thyme
1 tsp dried sage
1 tsp sea salt
½ tsp black pepper
1 tbsp olive oil
Optional But Dangerous
Cranberry sauce
Pigs in blankets
Extra butter for basting
Method
Preheat your air fryer to 180°C.
Pat the turkey dry with kitchen paper.
In a bowl, mix together the butter, garlic, thyme, sage, salt, and black pepper.
Rub the herb butter all over the turkey crown.
Drizzle lightly with olive oil.
Place the turkey into the air fryer basket or roasting tray.
Air fry at 180°C for 40–50 minutes depending on size, turning once halfway through if required.
Baste once or twice during cooking using any juices collected in the tray.
Cook until the turkey reaches a safe internal temperature and the outside is golden brown.
Remove carefully.
Cover loosely with foil.
Rest for at least 10 minutes before slicing.
Serve with roast potatoes, stuffing balls, pigs in blankets, and enough gravy to make sensible conversation impossible.
