Air-Fryer Ultimate Loaded Chicken Dinner Tray

If one recipe sums up what The Lad's Air-Frying Bible is all about, it's this one. Juicy roasted chicken, crispy potatoes, smoky sausages, roasted vegetables, garlic butter corn, bubbling mature cheddar and rich onion gravy all piled onto one enormous tray. This isn't fancy. It isn't delicate. It's simply everything people actually want to eat, all cooked together and served family-style. Maximum flavour. Minimum washing up. Zero leftovers.

Method

Preheat your air fryer to 200°C.

Mix together the olive oil, smoked paprika, garlic granules, onion granules, thyme, sea salt and black pepper, then coat the chicken thoroughly.

Toss the potatoes, peppers, onion wedges, whole garlic cloves and corn with the olive oil, salt and black pepper.

Air fry the vegetables for 10 minutes, shaking halfway through.

Add the chicken thighs and smoked sausages to the basket.

Continue cooking for 20–22 minutes, turning everything halfway through, until the chicken is cooked through, the potatoes are crispy and the sausages are lightly caramelised.

Meanwhile, melt the butter with the grated garlic and parsley.

Brush the corn generously with the garlic butter during the final 5 minutes of cooking.

Sprinkle the grated mature cheddar over the chicken and potatoes for the final 3 minutes, allowing it to melt and bubble.

For the gravy, gently cook the sliced onion in the butter until soft and caramelised. Stir in the flour, then gradually whisk in the chicken stock and Worcestershire sauce. Simmer until thick and rich.

Transfer everything to one large serving tray, drizzle over a little of the gravy and serve the rest alongside.

Finish with fresh parsley and lemon wedges.

Lad Tip: Bring the whole tray straight to the middle of the table and let everyone help themselves. The juices from the chicken, smoky sausages and garlic butter all mix together underneath, turning the potatoes into the best part of the entire meal—so make sure nobody leaves them behind.
