Air-Fryer Ultimate Roast Potatoes

This is Christmas dinner territory. Not ordinary roast potatoes. Not pale, soft little disappointments that sit quietly on the plate. These are proper.

You’ll Need

1kg Maris Piper potatoes, peeled and cut into chunky roast potato pieces
2 tbsp goose fat, beef dripping, or vegetable oil
1 tsp sea salt
½ tsp black pepper
1 tsp garlic powder
1 tsp dried rosemary

Optional But Dangerous
Extra sea salt
Fresh rosemary

Gravy for dunking

Method

Preheat your air fryer to 200°C.

Place the potatoes into a saucepan of cold salted water.

Bring to the boil and simmer for 8–10 minutes until the edges soften slightly.

Drain thoroughly.

Return the potatoes to the empty pan and shake aggressively.

You want rough, fluffy edges. That's where the crunch comes from.

Add the goose fat, salt, pepper, garlic powder, and rosemary.

Toss carefully until every potato is coated.

Place the potatoes into the air fryer basket in a single layer.

Do not overcrowd them.

Work in batches if necessary.

Air fry at 200°C for 22–28 minutes, shaking every 7–8 minutes, until deeply golden, crispy, and beautifully crunchy all over.

For maximum Christmas dinner glory, give them a final 2-minute blast at 205°C.

Serve immediately while still crackling hot.

Lad Tip: The rougher the edges before cooking, the crispier the roast potatoes become. If they look slightly battered before they go into the fryer, you're doing it right. Christmas roast potatoes should crunch before they surrender.
