Air Fryer Welsh Laverbread & Cockle Croquettes

Laverbread and cockles are two of the Welsh coast's strongest flavours. Folded through potato with leek and oats, they make dark, savoury croquettes with real character. The filling chills firm before an oat-panko coating goes on. The air fryer crisps that shell while the cooked cockles simply heat through.

You’ll Need

For the Croquettes
500g cold mashed potato
250g cooked cockle meat, drained
100g laverbread
1 small leek, finely sliced
20g butter
1 tbsp lemon juice
1/2 tsp white pepper
1/2 tsp sea salt

For the Coating
60g plain flour
2 eggs, beaten
80g panko breadcrumbs
50g fine porridge oats
Vegetable oil spray

Optional but dangerous
Welsh rarebit sauce
Lemon wedges
Cold Welsh ale

Method

Air fry the leek and butter in a shallow dish at 180°C for 5 minutes.

Mix with the mash, cockles, laverbread, lemon juice, pepper and salt.

Shape into 16 short croquettes and chill for 30 minutes.

Mix the panko and oats together.

Coat each croquette in flour, egg and the oat crumb.

Preheat your air fryer to 190°C and spray the croquettes generously with oil.

Air fry in batches for 10-12 minutes, turning once.

Check the crust is crisp and the centre piping hot.

Rest for 2 minutes and serve with lemon.

Lad Tip: Laverbread brings moisture as well as flavour. If the mixture feels soft after chilling, add a spoonful of oats rather than hoping the basket will negotiate with it.
