Air-Fryer Apple Tarte Tatin Pastry Squares

Air-fryer apple tarte tatin pastry squares from Sweet Munch, built for hot pastry, molten centres, sticky sugar and proper dessert chaos.

This is what happens when a French apple tart decides patience is overrated. Caramelised apples. Buttery pastry. Brown sugar. Golden flaky layers. The sort of dessert that smells like a bakery, a café, and a very good life decision all at the same time.

You’ll Need

1 sheet ready-rolled puff pastry
2 apples, peeled and sliced
40g butter
3 tbsp brown sugar
1 tsp cinnamon
1 tsp vanilla extract
For The Finish
1 tbsp icing sugar
Extra caramel sauce
Optional But Dangerous
Vanilla ice cream
Whipped cream
Crushed pecans

Method

Preheat your air fryer to 180°C.

In a small pan or microwave-safe bowl, melt the butter.

Stir in the brown sugar, cinnamon, and vanilla extract.

Pour the mixture into a small square baking tin or foil tray that fits inside your air fryer.

Arrange the apple slices neatly over the caramel mixture.

Lay the puff pastry over the apples, tucking the edges down slightly around the fruit.

Prick the pastry lightly with a fork.

Air fry at 180°C for 12–15 minutes until the pastry is puffed, golden, and crisp.

Allow to cool for 3–4 minutes.

Carefully invert onto a serving plate so the caramelised apples sit on top.

Dust lightly with icing sugar.

Serve warm while the caramel remains soft and sticky.

Lad Tip: The hardest part of tarte tatin is waiting long enough to turn it out without wearing molten caramel. Give it a few minutes. The reward is a proper glossy apple topping that looks like you spent far more effort on it than you actually did.
