Air-Fryer Australian Lemon Pepper Barramundi preparation stage

Introduction

Australia doesn't overcomplicate good fish. When you've got fresh barramundi, all you really need is lemon, cracked pepper, a bit of garlic, and enough heat to crisp the outside while keeping the flesh beautifully moist. Barramundi is one of Australia's great fish. Firm, flaky, slightly sweet, and perfect for the air fryer. This is the sort of meal you'd expect to find in a beachside café somewhere along the Queensland coast with a cold drink and a sea breeze doing most of the work.

You’ll Need

4 barramundi fillets
2 tbsp olive oil
Juice of 1 lemon
Zest of 1 lemon
2 cloves garlic, finely grated
2 tsp cracked black pepper
1 tsp sea salt
1 tsp smoked paprika
Small handful fresh parsley, chopped
To Finish
Extra lemon wedges
Fresh parsley
Optional but Dangerous
Chunky chips
Coleslaw
Grilled corn
Garlic butter

Method

Preheat your air fryer to 200°C.

Pat the barramundi fillets dry with kitchen paper.

In a bowl mix together the olive oil, lemon juice, lemon zest, garlic, cracked black pepper, salt, and smoked paprika.

Coat the fish fillets thoroughly.

Allow to marinate for 10 minutes if possible.

Lightly spray the air fryer basket with oil.

Place the barramundi fillets skin-side down into the basket.

Air fry at 200°C for 8–10 minutes until the fish flakes easily and the edges begin turning golden.

During the final minute, squeeze over a little extra lemon juice.

Allow the fish to rest for 1 minute before serving.

Finish with fresh parsley and lemon wedges.

Serve immediately with chips, coleslaw, or grilled corn if using.

Lad Tip: Barramundi doesn't need rescuing. The fish is already doing most of the heavy lifting. The job of the lemon and pepper is simply to make a good fish taste even better. If you can still taste the fish first and the seasoning second, you've nailed it.
