Air-Fryer Bbq Chicken Pizza Toasties
Air-Fryer Bbq Chicken Pizza Toasties preparation stage

This is what happens when a pizza delivery and a toasted sandwich maker get locked in a room together. Crispy toasted bread. Smoky BBQ chicken. Melted mozzarella. Red onions. Sticky sauce. Cheese pulls that require commitment and absolutely no concern for dignity. It's quick, filthy, ridiculously satisfying, and exactly the sort of fakeaway you end up making again two days later.

You’ll Need

4 thick slices white bread or sourdough
300g chicken thighs, diced
100g grated mozzarella
50g grated cheddar
½ small red onion, sliced thin
1 tbsp olive oil

BBQ Chicken Mix
3 tbsp smoky BBQ sauce
1 tsp smoked paprika
1 tsp garlic powder
½ tsp chilli flakes
1 tsp salt
½ tsp black pepper

To Finish
Extra BBQ sauce drizzle
Fresh parsley

Optional but Dangerous
Jalapeños
Pepperoni slices
Crispy bacon bits

Method

Preheat your air fryer to 190°C.

Place the diced chicken into a bowl with the olive oil, smoked paprika, garlic powder, chilli flakes, salt, and black

pepper.

Mix thoroughly.

Air fry at 190°C for 10–12 minutes, shaking halfway, until cooked through and lightly charred around the edges.

Toss the cooked chicken through the BBQ sauce until fully coated.

Lay out the bread slices.

Divide the BBQ chicken between two slices.

Top with mozzarella, cheddar, and sliced red onion.

Place the remaining bread slices on top and press gently.

Place the toasties into the air fryer basket.

Air fry at 190°C for 5–7 minutes, carefully turning halfway, until golden, crispy, and the cheese is fully melted.

Remove carefully.

Slice diagonally and drizzle with extra BBQ sauce.

Finish with parsley if using.

Serve immediately while the cheese is still stretching and trying to escape.

Lad Tip: A proper pizza toastie should require at least one awkward bite where molten cheese tries to leave with the filling. If it stays perfectly contained, you've not used enough cheese.
