Air-Fryer Beef & Ale Loaded Chips preparation stage

You’ll Need

500g beef steak, cut into bite-sized strips
500g frozen thick-cut chips
100g grated mature cheddar
50g grated mozzarella
1 small onion, sliced
1 tbsp olive oil
1 tsp sea salt
½ tsp black pepper
1 tsp garlic powder

Ale Gravy
200ml dark ale
300ml beef stock
1 tbsp plain flour
1 tsp Worcestershire sauce
1 tsp wholegrain mustard

Optional but Dangerous
Crispy onions
Horseradish sauce
Extra cheese
Spring onions

Method

Preheat your air fryer to 200°C.

Cook the chips for 16–20 minutes, shaking every 5 minutes, until deeply golden and crisp.

Meanwhile add the beef, onion, olive oil, salt, pepper, and garlic powder to a foil tray or heatproof dish.

Air fry at 190°C for 8–10 minutes, stirring halfway, until browned.

Stir in the flour and cook for 1 minute.

Gradually pour in the ale and beef stock.

Add the Worcestershire sauce and mustard.

Return to the air fryer for 8–10 minutes until thick, rich, and glossy.

Transfer the chips into a foil tray or serving dish.

Spoon the beef and ale mixture generously over the chips.

Top with the cheddar and mozzarella.

Return to the air fryer at 180°C for 3–4 minutes until the cheese melts and bubbles.

Finish with crispy onions, spring onions, or horseradish if using.

Serve immediately while everything is still gloriously molten.

Lad Tip: Good ale gravy should coat the chips, not drown them. If the chips completely disappear under a lake of gravy, you've gone from loaded chips to a rescue mission.
