You’ll Need

500g beef mince
6 rashers smoked bacon, chopped
1 sheet ready-rolled puff pastry
100g grated cheddar
50g grated mozzarella
1 small onion, finely diced
1 egg, beaten
1 tbsp olive oil

Cheeseburger Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper

Optional but Dangerous
Burger sauce
Pickles
Jalapeños
Extra cheese

Method

Preheat your air fryer to 190°C.

Add the beef mince, bacon, onion, olive oil, and seasoning to a foil tray or heatproof dish.

Air fry for 10–12 minutes, stirring halfway, until browned and loaded with flavour.

Allow the mixture to cool slightly.

Unroll the puff pastry onto a board.

Scatter the cheddar and mozzarella evenly over the pastry.

Spoon the beef mixture along the centre.

Roll tightly into a long sausage shape.

Seal the edge and place seam-side down.

Cut into thick individual rolls.

Brush the tops with beaten egg.

Place into the air fryer basket with space between each roll.

Air fry at 190°C for 10–12 minutes until puffed, golden, and deeply crisp.

Allow to rest for 2 minutes before serving.

Serve with burger sauce, pickles, or jalapeños if using.

Lad Tip: The cheese should try to escape during cooking. That's not a fault. That's a quality-control check. The best rolls always leak a little bit of molten cheese somewhere along the way.
