You’ll Need

250g straight-to-wok noodles
2 cloves garlic, finely chopped, 2 spring onions, sliced
1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp sesame oil
1 tbsp chilli oil, 1 tsp brown sugar, 1 tsp sesame seeds, Black pepper

Optional but Dangerous
Extra chilli oil
Fresh coriander
Crispy fried onions
Sliced red chillies

Method

Preheat your air fryer to 190°C.

Add the garlic, spring onions, soy sauces, sesame oil, chilli oil, brown sugar, sesame seeds, and black pepper into a foil tray or heatproof dish.

Air fry for 2–3 minutes until fragrant and sizzling.

Add the noodles directly into the tray.

Toss thoroughly until every strand is coated in the chilli oil mixture.

Air fry for 5–6 minutes, stirring halfway, until the noodles are hot and starting to catch slightly round the edges.

Finish with extra chilli oil, coriander, crispy onions, or sliced chillies if using. Serve immediately while still steaming hot.

Lad Tip: Biang Biang noodles are supposed to be slightly messy. If you've managed to eat them without getting chilli oil somewhere you didn't intend, Chen Wei would suspect you weren't trying hard enough.
