This is the sort of street food that keeps entire train stations fed. Crispy toasted bread loaded with spiced potatoes, green chillies, melted cheese, onions, and enough buttery crunch to make you forget whatever sensible lunch plans you originally had. Hot. Cheesy. Spicy. The sort of fakeaway that disappears while it's still too hot to eat properly.
You’ll Need
4 thick slices white bread
300g potatoes, peeled and diced
100g grated cheddar
50g grated mozzarella
1 tbsp butter
Bombay Potato Filling
1 small onion, finely diced
1 green chilli, finely sliced
1 tsp garam masala
1 tsp cumin
½ tsp turmeric
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper
To Finish
Fresh coriander
Sliced red onion
Optional but Dangerous
Mint chutney
Mango chutney
Extra chillies
Method
Preheat your air fryer to 190°C.
Boil or microwave the potatoes until soft.
Mash roughly.
Mix through the onion, green chilli, garam masala, cumin, turmeric, smoked paprika, salt, and black pepper.
Butter one side of each bread slice.
Turn two slices butter-side down.
Spread the spiced potato mixture generously over them.
Top with both cheeses.
Add a little sliced onion.
Place the remaining bread slices on top, butter-side facing upwards.
Place carefully into the air fryer basket.
Air fry at 190°C for 5–7 minutes.
Carefully flip.
Cook for another 3–4 minutes until deeply golden, crispy, and the cheese is fully melted.
Remove carefully.
Slice diagonally.
Finish with coriander and chutney if using.
Serve immediately while the cheese is still stretching and the filling is trying to escape.
