You’ll Need
600g boneless chicken thighs
500g baby potatoes, halved
1 tbsp olive oil
Cajun Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
½ tsp dried oregano
½ tsp chilli flakes
1 tsp salt
½ tsp black pepper
Honey Glaze
2 tbsp runny honey
1 tbsp melted butter
1 tsp Dijon mustard
Small squeeze of lemon juice
Optional but Dangerous
Garlic mayo
Corn on the cob
Pickles
Hot sauce
Method
Preheat your air fryer to 200°C.
In a bowl, mix together all Cajun seasoning ingredients.
Toss the chicken thighs with half the seasoning and a little olive oil until fully coated.
Toss the potatoes with the remaining seasoning and olive oil.
Place the potatoes into the air fryer basket and cook for 8 minutes.
Add the chicken thighs alongside the potatoes.
Air fry for 14–16 minutes, turning the chicken halfway through, until the potatoes are crisp and the chicken is cooked through.
Meanwhile mix together the honey, melted butter, mustard, and lemon juice.
During the final 3 minutes of cooking, brush the chicken generously with the honey glaze.
Return to the fryer until the glaze becomes sticky, shiny, and lightly caramelised around the edges.
Serve the chicken over the Cajun potatoes with any optional extras.
