Air-Fryer Caribbean Jerk Chicken Rice Boxes preparation stage

You’ll Need

600g chicken thighs, diced
250g cooked rice, 1 red pepper, diced
1 small red onion, diced, 1 tbsp olive oil

Jerk Seasoning
1 tsp smoked paprika, 1 tsp garlic powder
1 tsp onion powder, 1 tsp dried thyme
½ tsp ground cinnamon, ½ tsp chilli flakes
1 tsp sea salt
½ tsp black pepper
1 tsp brown sugar

To Finish
Juice of ½ lime
Fresh spring onions

Optional but Dangerous
Mango salsa
Hot sauce
Pineapple chunks
Cooling yoghurt dip

Method

Preheat your air fryer to 200°C.

In a large bowl mix together all the jerk seasoning ingredients.

Add the chicken, olive oil, pepper, and onion.

Toss thoroughly until everything is evenly coated.

Place into the air fryer basket in a single layer.

Air fry at 200°C for 12–14 minutes, shaking halfway through, until the chicken is cooked through and lightly charred around the edges.

Warm the rice if needed.

Divide the rice between serving boxes or bowls.

Top with the jerk chicken mixture.

Finish with lime juice and spring onions.

Add mango salsa, pineapple, or hot sauce if using.

Serve immediately.

Lad Tip: Good jerk chicken should have layers. Sweet first. Smoke second. Heat creeping in afterwards. If the chilli punches you in the face immediately, you've missed half the fun.
