You’ll Need

600g chicken thighs, diced, 1 tbsp olive oil

Chilli Lime Seasoning
1 tsp smoked paprika, 1 tsp garlic powder
1 tsp ground cumin, ½ tsp chilli flakes
1 tsp sea salt
½ tsp black pepper
Juice of 1 lime

To Serve
8 small tortillas
Shredded lettuce
1 small red onion, finely sliced
Fresh coriander
Lime wedges

Optional but Dangerous
Guacamole
Sour cream
Jalapeños
Hot sauce
Grated cheddar

Method

Preheat your air fryer to 200°C.

In a large bowl mix together the olive oil, smoked paprika, garlic powder, cumin, chilli flakes, salt, black pepper, and lime juice.

Add the chicken and coat thoroughly.

Place the chicken into the air fryer basket in a single layer.

Air fry at 200°C for 12–14 minutes, shaking halfway through, until cooked through and lightly charred around the edges.

Warm the tortillas during the final minute.

Fill each tortilla with lettuce, red onion, and chilli lime chicken.

Finish with coriander and lime wedges.

Add guacamole, sour cream, jalapeños, hot sauce, or cheese if using.

Serve immediately.

Lad Tip: Tacos should be slightly overloaded. If you can eat one without something falling out onto the plate, you've shown a level of restraint that Mexico neither expects nor encourages.
