You’ll Need

500g chicken thighs, diced, 1 red pepper, chopped
1 small red onion, chopped, 1 tbsp vegetable oil
1 tsp smoked paprika, 1 tsp chilli flakes, 1 tsp ground cumin
1 tsp garlic powder, 1 tsp light soy sauce, 1 tsp brown sugar, 1 tsp Sichuan pepper
1 tsp salt

Optional but Dangerous
Extra chilli oil
Fresh coriander
Spring onions
Extra chilli flakes

Method

Preheat your air fryer to 200°C.

In a large bowl combine the oil, smoked paprika, chilli flakes, cumin, garlic powder, soy sauce, brown sugar, Sichuan pepper, and salt.

Add the chicken and mix thoroughly until every piece is fully coated.

Thread the chicken, pepper, and onion onto skewers alternately.

Place the skewers into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, turning halfway through.

Cook until the chicken is lightly charred around the edges and fully cooked through.

Finish with coriander, spring onions, extra chilli flakes, or chilli oil if using. Serve immediately while still sizzling hot.

Lad Tip: The best Chuan Chuan stalls always smell stronger than they look. If the kitchen isn't filled with garlic, chilli, cumin, and roasted spice by the halfway point, you've been far too cautious.
