Air-Fryer Cowboy Beef Potato Skillet Trays preparation stage

You’ll Need

500g beef steak, cut into bite-sized chunks
600g potatoes, diced into small cubes
1 tbsp olive oil
1 red onion, sliced
100g grated mature cheddar
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Optional but Dangerous
Crispy bacon bits
Jalapeños
Garlic mayo
BBQ sauce

Method

Preheat your air fryer to 200°C.

Add the diced potatoes to a bowl with half the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Toss thoroughly until evenly coated.

Air fry the potatoes for 16–18 minutes, shaking every 5 minutes, until golden and crisp.

Meanwhile toss the beef with the remaining olive oil, a pinch of salt, pepper, and chilli flakes.

Add the beef and sliced onion to the air fryer during the final 6–8 minutes of cooking.

Cook until the beef develops dark roasted edges and the onions soften.

Transfer everything into a foil tray or heatproof dish.

Scatter over the grated cheddar.

Return to the air fryer at 180°C for 3–4 minutes until the cheese melts and bubbles.

Finish with bacon bits, jalapeños, BBQ sauce, or garlic mayo if using.

Serve immediately while hot enough to require common sense.

Lad Tip: Cowboy food should look like somebody lost control halfway through cooking it. If the tray looks overloaded and slightly unreasonable, you're probably doing it correctly.
