Air-Fryer Crab & Cheese Loaded Potato Skins preparation stage

You’ll Need

4 large baking potatoes
150g crab meat
100g mature cheddar, grated
2 spring onions, finely sliced
1 tbsp mayonnaise
1 clove garlic, finely grated
Juice of half a lemon
1 tsp sea salt
½ tsp black pepper
1 tbsp olive oil

Optional but Dangerous
Extra cheddar
Chilli flakes
Garlic aioli
Fresh parsley
Cold lager

Method

1 - Preheat your air fryer to 200°C.

2 - Rub the potatoes with olive oil and a little salt.

3 - Air fry for 35–40 minutes, turning halfway, until crisp outside and fluffy inside.

4 - Allow them to cool slightly.

5 - Slice each potato in half lengthways.

6 - Carefully scoop out most of the middle, leaving enough potato behind to keep the skins sturdy.

7 - In a bowl combine the crab meat, spring onions, mayonnaise, garlic, lemon juice, black pepper, and half the grated cheese.

8 - Mix thoroughly.

9 - Return the empty potato skins to the air fryer for 5 minutes until extra crispy.

10 - Fill each skin generously with the crab mixture.

11 - Top with the remaining cheddar.

12 - Air fry for 4–6 minutes until the cheese melts, bubbles, and starts colouring around the edges.

13 - Finish with parsley or chilli flakes if using.

Serve immediately while still hot and gloriously unstable.

Lad Tip: Loaded potato skins should never look tidy. If cheese starts escaping down the sides and somebody burns their fingers because they couldn't wait, you've nailed it.
