You’ll Need

500g cooked mussels
200ml double cream
3 cloves garlic, finely sliced
1 small shallot, finely diced
1 tbsp olive oil
1 tsp sea salt
½ tsp black pepper
1 tbsp chopped parsley
Juice of half a lemon

Optional but Dangerous
Crusty bread
Extra parsley
Chilli flakes
Garlic butter
Cold white wine

Method

1 - Preheat your air fryer to 180°C.

2 - Add the olive oil, shallot, and garlic to a foil tray or heatproof dish.

3 - Air fry for 3–4 minutes until softened and fragrant.

4 - Pour in the double cream and add the salt and black pepper.

5 - Stir thoroughly and return to the air fryer for 3 minutes until the cream starts warming through.

6 - Add the mussels and gently stir them through the sauce.

7 - Air fry at 180°C for 6–8 minutes until the mussels are piping hot and the sauce has thickened slightly.

8 - Stir through the parsley and lemon juice.

9 - Allow to stand for 1 minute before serving.

10 - Serve immediately with plenty of bread nearby.

Lad Tip: The bread isn't a side dish. The bread is a recovery vehicle for the garlic cream sauce sitting at the bottom of the pot. Leave that behind and you've missed half the meal.
