Air-Fryer Crispy Buffalo Chicken Wraps preparation stage

You’ll Need

600g chicken thighs, cut into strips
80g plain flour
40g cornflour
1 tsp smoked paprika
1 tsp garlic powder
1 tsp sea salt
½ tsp black pepper
Oil spray

Buffalo Sauce
50g butter
4 tbsp hot sauce
1 tsp honey

To Serve
4 large tortilla wraps
Shredded lettuce
1 small red onion, finely sliced
Ranch dressing

Optional but Dangerous
Grated cheddar
Jalapeños
Blue cheese dressing
Extra hot sauce

Method

Preheat your air fryer to 200°C.

In a bowl mix together the flour, cornflour, smoked paprika, garlic powder, salt, and black pepper.

Toss the chicken strips thoroughly in the coating.

Lightly spray the air fryer basket with oil.

Place the chicken into the basket in a single layer and spray the tops lightly with oil.

Air fry at 200°C for 12–14 minutes, shaking halfway through, until golden, crisp, and cooked through.

Meanwhile melt the butter and stir through the hot sauce and honey.

Tip the cooked chicken into a large bowl and immediately toss through the buffalo sauce.

Warm the wraps briefly.

Fill with lettuce, red onion, buffalo chicken, and ranch dressing.

Roll tightly and serve immediately.

Lad Tip: Buffalo chicken should leave evidence. If your fingers, plate, and at least one napkin aren't covered in sauce by the end, you've been far too conservative with it.
