Air-Fryer Crispy Salt & Pepper Squid preparation stage

You’ll Need

400g squid rings, cleaned and patted dry
80g cornflour
40g plain flour
1 tsp sea salt
1 tsp cracked black pepper
1 tsp garlic powder
½ tsp chilli flakes
2 eggs, beaten
Oil spray

To Finish
2 spring onions, sliced
1 red chilli, finely sliced
1 clove garlic, finely chopped

Optional but Dangerous
Sweet chilli sauce
Garlic mayo
Lime wedges
Extra chilli flakes
Cold lager

Method

1 - Preheat your air fryer to 200°C.

2 - Pat the squid completely dry with kitchen paper. This matters more than people realise.

3 - In a bowl combine the cornflour, plain flour, salt, black pepper, garlic powder, and chilli flakes.

4 - Dip the squid rings into the beaten egg.

5 - Coat thoroughly in the flour mixture.

6 - Lightly spray the air fryer basket with oil.

7 - Arrange the squid rings in a single layer and spray the tops lightly with oil.

8 - Air fry at 200°C for 7–9 minutes, shaking halfway through, until crisp and golden.

9 - During the final minute, add the garlic, spring onions, and chilli so they soften slightly and release their flavour.

10 - Toss everything together immediately after cooking.

11 - Serve hot with your chosen dipping sauce and lime wedges.

Lad Tip: Squid has a very small window between "beautifully tender" and "chewing through a bicycle tyre." The second it's golden, get it on the plate and start eating.
