Air-Fryer Custard-filled Vanilla Slices

Sweet Munch Recipe

Air-Fryer Custard-filled Vanilla Slices

Air-fryer custard-filled vanilla slices from Sweet Munch, built for hot pastry, molten centres, sticky sugar and proper dessert chaos.

Every town has a bakery that does these well, and every one of them sells out first. This version keeps the pastry crisp, the custard thick, and the mess absolutely unavoidable.

Air-Fryer Custard-filled Vanilla Slices preparation stage

You’ll Need

Ready-rolled puff pastry
Ready-made vanilla custard (thick, chilled custard works best)

Optional but Encouraged
Icing sugar
Vanilla extract
White icing or fondant (if you’re committing fully)

Method

1 - Preheat your air fryer to 180°C for 3–5 minutes.

2 - Unroll the puff pastry and cut it into equal rectangles. You’ll need two per slice.

3 - Place the pastry rectangles into the air fryer basket, lined with baking paper.

4 - Air fry at 180°C for 8–10 minutes until puffed, golden, and fully crisp.

5 - Remove the pastry and allow it to cool completely. This matters — warm pastry melts custard.

6 - Once cooled, carefully slice the pastry horizontally if it’s puffed too high, or gently press it down.

7 - Spoon or pipe a thick layer of custard onto one pastry rectangle.

8 - Top with a second pastry rectangle and press down lightly to sandwich.

9 - Dust with icing sugar or drizzle with white icing if using. Serve chilled or at room temperature.

Lad Tip: Thick custard only. Runny custard equals collapse. Chill the slices for 10 minutes before eating if you want cleaner cuts. These are better eaten slightly cold — proper bakery behaviour. If custard squeezes out the sides, you’ve done it right.
