You’ll Need

8 slices thick white bread, 250g raw king prawns, finely chopped
2 spring onions, finely sliced, 1 clove garlic, crushed, 1 tsp sesame oil
1 tsp light soy sauce, 1 egg white, 1 tsp sesame seeds, Salt, Black pepper, Oil spray

Optional but Dangerous
Sweet chilli sauce, Chilli oil, Extra sesame seeds, Lime wedges

Method

Preheat your air fryer to 200°C.

In a bowl, combine the chopped prawns, spring onions, garlic, sesame oil, soy sauce, egg white, salt, and black pepper.

Mix thoroughly until slightly sticky.

Cut each bread slice into four triangles.

Spread the prawn mixture generously onto one side of each triangle.

Sprinkle over the sesame seeds.

Lightly spray the tops with oil.

Place into the air fryer prawn-side up in a single layer.

Air fry at 200°C for 6–8 minutes until the bread is crisp, the prawns are cooked through, and the tops are lightly golden.

Serve immediately with sweet chilli sauce or chilli oil if using.

Lad Tip: The secret is not overloading the bread. Too much topping and it turns into seafood roofing material. Just enough gives you crisp toast underneath and juicy prawns on top — exactly how Guangzhou intended.
