This is what happens when the kebab shop owner decides chips are no longer a side dish. Crispy fries buried under shaved doner-style meat, melted cheese, garlic sauce, chilli sauce, crunchy salad, and enough flavour to make you forget every sensible decision you made earlier that day. Messy. Greasy. Completely unnecessary. And absolutely magnificent.
You’ll Need
400g frozen thick-cut fries
500g lamb mince, ½ small onion, finely grated
2 cloves garlic, crushed, 1 tsp ground cumin
1 tsp ground coriander, 1 tsp smoked paprika
½ tsp dried oregano, ½ tsp ground cinnamon
1 tsp salt, ½ tsp black pepper
Quick Garlic Sauce
4 tbsp mayonnaise
2 tbsp Greek yoghurt
1 clove garlic, finely grated
Small squeeze of lemon
To Finish
Handful shredded lettuce
½ red onion, sliced thin
2 tomatoes, diced
Chilli sauce
100g grated cheddar
Optional but Dangerous
Jalapeños
Pickled chillies
Extra garlic sauce
Method
Preheat your air fryer to 200°C.
Mix the lamb mince, grated onion, garlic, cumin, coriander, smoked paprika, oregano, cinnamon, salt, and black
pepper together thoroughly until sticky.
Press the mixture firmly into a small foil tray or loaf-shaped dish.
Air fry at 180°C for 15–18 minutes until cooked through and lightly browned.
Allow to rest for 5 minutes.
Slice the doner meat thinly.
Return the sliced meat to the air fryer basket and cook at 200°C for 3–4 minutes until the edges become crispy
and slightly charred.
Meanwhile cook the fries according to packet instructions until deeply golden and crisp.
Mix together the garlic sauce ingredients.
Pile the fries into a large serving tray.
Scatter over the crispy doner meat.
Cover with grated cheese.
Return to the air fryer for 2–3 minutes until melted.
Top with lettuce, red onion, and tomatoes.
Drizzle generously with garlic sauce and chilli sauce.
Serve immediately while hot, messy, and structurally unstable.
