Air-Fryer French Dijon Herb Trout Fillets preparation stage

Introduction

The French have a habit of making simple food feel far more sophisticated than it really is. A little Dijon mustard. Fresh herbs. Good fish. Proper butter. That's pretty much the entire trick. Trout works beautifully here because its rich flavour stands up to the mustard without being overwhelmed. The air fryer creates lightly crisp edges while the herb crust locks in moisture and flavour. This is the sort of meal you'd expect to find in a small countryside bistro overlooking a river somewhere in rural France. Simple. Elegant. Absolutely delicious.

You’ll Need

4 trout fillets
1 tbsp Dijon mustard
1 tbsp wholegrain mustard
1 tbsp olive oil
1 clove garlic, finely grated
1 tsp dried thyme
1 tsp dried parsley
1 tsp sea salt
½ tsp black pepper
Juice of ½ lemon
To Finish
Fresh parsley, chopped
Lemon wedges
Optional but Dangerous
Buttered new potatoes
Green beans
Crusty French bread
Garlic butter

Method

Preheat your air fryer to 190°C.

Pat the trout fillets dry using kitchen paper.

In a bowl mix together the Dijon mustard, wholegrain mustard, olive oil, garlic, thyme, parsley, salt, black pepper, and lemon juice.

Brush the mixture generously over the trout fillets.

Lightly spray the air fryer basket with oil.

Place the trout fillets skin-side down into the basket.

Air fry at 190°C for 8–10 minutes until the trout flakes easily and the mustard crust turns lightly golden.

Allow the fish to rest for 1 minute before serving.

Finish with fresh parsley and lemon wedges.

Serve immediately with potatoes, green beans, or crusty bread if using.

Lad Tip: Trout is naturally richer than most white fish, which means it loves mustard. The trick is balance. You want enough Dijon to wake the fish up, not enough to start a diplomatic incident with France. The moment the fish flakes cleanly, get it on the plate and crack on.
