You’ll Need
600g chicken breast, cut into bite-sized chunks
80g plain flour
40g cornflour
2 eggs, beaten
100g breadcrumbs
1 tsp sea salt
½ tsp black pepper
1 tsp garlic powder
Oil spray
Garlic Butter Filling
60g butter, softened
3 cloves garlic, finely grated
1 tbsp fresh parsley, finely chopped
Pinch of salt
Optional but Dangerous
Garlic mayo
Potato wedges
Parmesan shavings
Method
Mix together the softened butter, garlic, parsley, and pinch of salt.
Place into the freezer for 20–30 minutes until firm.
Preheat your air fryer to 200°C.
Carefully flatten each chicken piece slightly.
Add a small piece of the chilled garlic butter into the centre and fold the chicken around it.
Coat each piece in flour, then egg, then breadcrumbs.
Lightly spray the air fryer basket with oil.
Place the chicken bites into the basket in a single layer.
Spray the tops lightly with oil.
Air fry at 200°C for 10–12 minutes, turning halfway through, until deeply golden and cooked through.
Allow to rest for 2 minutes before serving so the butter doesn't immediately try to remove the roof of your mouth.
Serve hot with your chosen sides.
