Air-Fryer Garlic Herb Beef Skewer Trays preparation stage

You’ll Need

600g sirloin, rump, or frying steak, cut into chunky cubes
1 red onion, cut into chunks
1 red pepper, cut into chunks
1 tbsp olive oil

Garlic Herb Marinade
3 cloves garlic, grated
1 tbsp fresh parsley, finely chopped
1 tsp dried oregano
1 tsp smoked paprika
1 tsp sea salt
½ tsp black pepper
Juice of ½ lemon

Optional but Dangerous
Garlic mayo
Chimichurri
Flatbreads
Cold lager

Method

Preheat your air fryer to 200°C.

In a large bowl combine the olive oil, garlic, parsley, oregano, smoked paprika, salt, black pepper, and lemon juice.

Add the beef and toss thoroughly until every piece is coated.

Leave to marinate for 15–20 minutes if you've got time.

Thread the beef, onion, and pepper onto skewers alternately.

Place the skewers into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, turning halfway through.

Cook until the beef develops dark roasted edges while remaining juicy inside.

For extra char, blast for a final 1–2 minutes at 205°C.

Allow the skewers to rest for 2 minutes before serving.

Finish with a little extra parsley and a squeeze of lemon.

Serve immediately with garlic mayo, flatbreads, or chimichurri if using.

Lad Tip: The trick with beef skewers is resisting the urge to cook them into submission. A little char on the outside and juicy beef in the middle beats grey, overcooked cubes every single time.
