You’ll Need

600g chicken thighs, cut into chunky pieces
2 tbsp extra virgin olive oil
Juice of 1 lemon
2 cloves garlic, finely grated
1 tsp dried oregano
1 tsp sea salt
½ tsp black pepper
½ tsp smoked paprika

To Serve
Warm flatbreads
Red onion, sliced
Cucumber
Tzatziki

Optional but Dangerous
Crumbled feta
Olives
Extra lemon wedges

Method

Preheat your air fryer to 200°C.

In a large bowl, mix together the olive oil, lemon juice, garlic, oregano, salt, black pepper, and smoked paprika.

Add the chicken and coat thoroughly.

Leave to marinate for 20–30 minutes if you've got time.

Thread the chicken onto skewers, leaving a little space between pieces.

Place the skewers into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, turning halfway through, until lightly charred around the edges and cooked through.

For extra taverna-style colour, blast for a final 2 minutes at 205°C.

Serve immediately with flatbreads, tzatziki, onion, cucumber, and feta if using.

Lad Tip: Greek food rewards restraint. Don't bury these under ten different sauces. Lemon, oregano, garlic, and good chicken have been doing the job perfectly well for centuries.
