Air-Fryer Hangzhou Tea-smoked Chicken Wings preparation stage

You’ll Need

1kg chicken wings, 2 tbsp light soy sauce, 1 tbsp dark soy sauce
1 tbsp honey, 2 cloves garlic, crushed, 1 tsp grated ginger
1 tsp Chinese five spice
1 tsp black pepper
1 tsp sesame oil
1 black tea bag

Optional but Dangerous
Spring onions, Sesame seeds, Chilli oil
Lime wedges

Method

Preheat your air fryer to 190°C.

In a bowl mix together the light soy sauce, dark soy sauce, honey, garlic, ginger, Chinese five spice, black pepper, sesame oil, and the contents of the tea bag.

Add the chicken wings and coat thoroughly.

Leave to marinate for at least 20 minutes if possible.

Place the wings into the air fryer basket in a single layer.

Air fry at 190°C for 22–25 minutes, turning halfway through.

During the final 3 minutes increase the temperature to 200°C until the wings develop dark caramelised edges.

Finish with spring onions, sesame seeds, or chilli oil if using. Serve immediately while hot, smoky, and slightly addictive.

Lad Tip: Tea-smoking sounds complicated until you realise it's basically another excuse to make chicken taste better. If the wings smell smoky, savoury, and slightly mysterious, Hangzhou would be perfectly happy with your efforts.
