You’ll Need

8 chicken drumsticks
1 tbsp olive oil
1 tsp sea salt
½ tsp black pepper
1 tsp garlic powder

Honey Mustard Glaze
2 tbsp honey
1 tbsp wholegrain mustard
1 tbsp Dijon mustard
1 tsp lemon juice
1 clove garlic, finely grated

To Serve
Potato wedges
Coleslaw

Optional but Dangerous
Corn on the cob
Pickles
Extra honey mustard sauce

Method

Preheat your air fryer to 190°C.

Pat the drumsticks dry with kitchen paper.

Toss with olive oil, salt, black pepper, and garlic powder.

Place into the air fryer basket in a single layer.

Air fry at 190°C for 22–25 minutes, turning halfway through, until golden and cooked through.

Meanwhile mix together the honey, wholegrain mustard, Dijon mustard, lemon juice, and garlic.

During the final 4–5 minutes of cooking, brush the drumsticks generously with the glaze.

Return to the fryer until sticky, glossy, and lightly caramelised around the edges.

Allow to rest for 2 minutes before serving.

Serve with wedges, coleslaw, or any chosen sides.

Lad Tip: Honey mustard should be balanced. If it tastes like pure honey, you've missed the point. If it tastes like pure mustard, you've also missed the point. The magic happens right in the middle where sweet and sharp start working together.
