You’ll Need

400g duck breast or cooked roast duck, sliced
500g potatoes, diced, 1 tbsp vegetable oil, 2 cloves garlic, crushed,
2 spring onions, sliced

For The Glaze
2 tbsp light soy sauce, 1 tbsp honey, 1 tsp hoisin sauce, 1 tsp sesame oil
½ tsp Chinese five spice

Optional but Dangerous
Chilli oil, Extra spring onions, Sesame seeds, Fresh coriander

Method

Preheat your air fryer to 200°C.

Toss the diced potatoes with the vegetable oil and cook for 18–20 minutes, shaking halfway, until deeply golden and crisp.

While the potatoes cook, mix together the soy sauce, honey, hoisin sauce, sesame oil, and Chinese five spice.

Add the duck to a bowl and coat thoroughly in the glaze.

Add the glazed duck to the potatoes for the final 6–8 minutes of cooking.

Shake once halfway through so the glaze caramelises properly around both the duck and potatoes.

Add the crushed garlic for the final 2 minutes.

Remove carefully and finish with sliced spring onions and sesame seeds.

Serve immediately while everything is still steaming hot and sticky.

Lad Tip: Duck fat and crispy potatoes are one of life's great combinations. If a few bits stick to the tray and go slightly darker than planned, scrape them back through. That's where half the flavour lives.
